These old-fashioned no-bake peanut butter balls are a quick and cozy treat made with just 3 simple ingredients. No oven, no chocolate, just peanut butter goodness!

- 1 cup smooth peanut butter not natural
- 1/2 cup salted butter softened
- 2 cups powdered sugar plus extra if needed
- 3/4 teaspoon pure vanilla extract
In a large bowl, beat the peanut butter and butter together until smooth using a hand mixer.
Sift the powdered sugar on top, add the vanilla, and beat again until a dough forms.
If the dough feels too sticky, mix in more powdered sugar a little at a time.
Line a baking sheet with parchment paper.
Roll the dough into ½ to 1-inch balls using a cookie scoop or teaspoon.
Place the balls on the tray and freeze for 20 minutes until firm.
Store in an airtight container in the fridge for up to a week, or in the freezer for up to 2 months.
- For a less sweet version, reduce powdered sugar to 1½ cups and add ¾ cup collagen peptides.
