Ingredients

  • 1 cup smooth peanut butter not natural
  • 1/2 cup salted butter softened
  • 2 cups powdered sugar plus extra if needed
  • 3/4 teaspoon pure vanilla extract

Instructions

  • In a large bowl, beat the peanut butter and butter together until smooth using a hand mixer.
  • Sift the powdered sugar on top, add the vanilla, and beat again until a dough forms.
  • If the dough feels too sticky, mix in more powdered sugar a little at a time.
  • Line a baking sheet with parchment paper.
  • Roll the dough into ½ to 1-inch balls using a cookie scoop or teaspoon.
  • Place the balls on the tray and freeze for 20 minutes until firm.
  • Store in an airtight container in the fridge for up to a week, or in the freezer for up to 2 months.

Notes

  • For a less sweet version, reduce powdered sugar to 1½ cups and add ¾ cup collagen peptides.
  • These are chocolate-free, but you can dip them in chocolate—see my Buckeye Balls Recipe!
  • Optional add-ins: mini chocolate chips, Rice Krispies, or crushed graham crackers.
