Ingredients

  • 1 cup rolled oats
  • ½ cup nut butter like peanut or almond
  • ¼ cup mini chocolate chips optional
  • 1 tsp vanilla extract optional
  • Pinch of salt

Instructions
 

  • Soak dates in warm water for 5–10 minutes to soften, then drain.
  • Add dates, oats, and nut butter to a food processor. Blend until smooth and dough-like.
  • Transfer to a bowl and stir in chocolate chips, vanilla, and salt if using.
  • Roll dough into bite-sized balls. Chill for 15–30 minutes to set.
  • Store in the fridge for up to 1 week or freeze for later.
