Easy No-Bake Chocolate Peanut Butter Oat Bars

- 1 cup creamy peanut butter or nut butter of choice
- 5 tablespoons butter
- ⅓ cup milk
- ¼ cup 100% pure maple syrup optional
- 2 teaspoons vanilla extract
- 1½ cups dark chocolate chips
- Pinch of sea salt
- 3¼ cups rolled oats regular or gluten-free
In a small saucepan, combine peanut butter, butter, milk, maple syrup, vanilla, and dark chocolate chips.
Heat over medium-low, stirring often, until fully melted and smooth.
In a large bowl, add rolled oats. Pour the warm mixture over the oats and stir until evenly coated.
Press the mixture firmly into a parchment-lined 8x8-inch square pan.
Chill in the fridge for 30 minutes to 1 hour, or until set.

You can swap the peanut butter for almond or cashew butter — both work beautifully. I haven’t tried sunflower seed butter yet, but it should be a great nut-free option.
