These 3-ingredient no-bake lemon oatmeal cookies are soft, chewy, and bursting with zesty flavor. Made in just 10 minutes with white chocolate, oats, and fresh lemon — they’re the easiest sunshine-sweet treat for busy days!

- 1 cup 164 g white chocolate chips
- 2 tbsp 30 ml fresh lemon juice
- 2 tsp lemon zest
- ½ cup + 2 tbsp 57 g quick oats
Line a baking sheet with parchment paper.
Melt white chocolate chips in a microwave-safe bowl, 15–30 seconds at a time, stirring in between, until smooth.
Whisk in the lemon juice until smooth and creamy.
Stir in lemon zest and oats until evenly mixed. Batter will be thick!
Scoop 1 tbsp-sized portions onto the tray and flatten slightly into disks using the back of a spoon or your fingers.
Optional: sprinkle a little extra zest on top for extra flavor and brightness.
Chill in the fridge for 30–60 minutes, or until cookies are firm to the touch. Let sit at room temperature for 10–15 minutes before eating.
- You’ll only need one large lemon for both juice and zest — maybe not even the whole thing!
- Be sure to strain your lemon juice for best texture.
- Want them sweeter? Use 2 tbsp less oats.
- Want more oat flavor? Add 2 tbsp more oats.
- Smaller scoops work great — I use a 1 tbsp OXO scoop.*
- Store in an airtight container in the fridge for up to 1 week, or freeze for longer.
